Roast Goose With Sage Bread Stuffing
Ingredients
- 1 whole goose, cleaned
- 2 oz onion, finely chopped
- 1 oz green sage, finely chopped
- 4 oz (about 1 large cup) stale bread crumbs
- 1 walnut-sized piece butter
- Salt and pepper to taste
- 1-2 egg yolks
Method
- 1 Finely chop the onion and sage.
- 2 In a bowl, combine the chopped onion, sage, bread crumbs, butter, salt, and pepper.
- 3 Mix in the egg yolks and incorporate everything well together.
- 4 Stuff the goose cavity loosely, leaving room for the stuffing to swell.
- 5 Spit the goose and tie it securely at both ends to prevent swinging.
- 6 Roast in a moderate oven (350°F) for 1 hour and 15 minutes to 1 hour and 45 minutes, until done.
