Roast Goose With Sage Bread Stuffing

Ingredients

  • 1 whole goose, cleaned
  • 2 oz onion, finely chopped
  • 1 oz green sage, finely chopped
  • 4 oz (about 1 large cup) stale bread crumbs
  • 1 walnut-sized piece butter
  • Salt and pepper to taste
  • 1-2 egg yolks

Method

  1. 1 Finely chop the onion and sage.
  2. 2 In a bowl, combine the chopped onion, sage, bread crumbs, butter, salt, and pepper.
  3. 3 Mix in the egg yolks and incorporate everything well together.
  4. 4 Stuff the goose cavity loosely, leaving room for the stuffing to swell.
  5. 5 Spit the goose and tie it securely at both ends to prevent swinging.
  6. 6 Roast in a moderate oven (350°F) for 1 hour and 15 minutes to 1 hour and 45 minutes, until done.
