Roast Goose Stuffed With Mashed Potatoes
Ingredients
- 1 whole goose
- seasoned mashed potatoes
- 2 cups water
- water or stock
- browned flour
- butter
- salt and pepper to taste
Method
- 1 Parboil the goose for two hours, then drain it.
- 2 Stuff the goose with seasoned mashed potatoes.
- 3 Place in a covered roaster with two cups of water in the pan and roast until done.
- 4 Pour off surplus fat, add water or stock to make desired gravy amount.
- 5 Thicken gravy with browned flour and butter, then season to taste.
