Roast Goose Stuffed With Mashed Potatoes

Ingredients

  • 1 whole goose
  • seasoned mashed potatoes
  • 2 cups water
  • water or stock
  • browned flour
  • butter
  • salt and pepper to taste

Method

  1. 1 Parboil the goose for two hours, then drain it.
  2. 2 Stuff the goose with seasoned mashed potatoes.
  3. 3 Place in a covered roaster with two cups of water in the pan and roast until done.
  4. 4 Pour off surplus fat, add water or stock to make desired gravy amount.
  5. 5 Thicken gravy with browned flour and butter, then season to taste.
