Roast Duck With Whole Apples

Ingredients

  • 1 duck
  • 12 small sour apples
  • 1 onion (optional)
  • 1 carrot (optional)

Method

  1. 1 Pluck and singe the duck, then draw it carefully without breaking the intestines. Wipe the duck with a wet towel.
  2. 2 Wipe the apples with a wet cloth and cut out the cores without breaking the fruit. Arrange the apples around the duck in a baking pan.
  3. 3 Place the pan in a hot oven (425°F) to quickly brown the duck.
  4. 4 Reduce the heat to moderate (350°F) and roast for about 20 minutes, or until the apples are tender but intact.
  5. 5 Baste both the duck and apples every five minutes until done. Serve on the same dish.
