Roast Duck With Sage Onion Stuffing

Ingredients

  • 1 duck, cleaned and dried
  • 1 oz onion, finely chopped
  • 0.5 oz green sage, finely chopped
  • 0.75 cup bread crumbs
  • 1 tbsp butter
  • Salt and black pepper to taste
  • Cayenne pepper (optional)
  • 1 egg yolk

Method

  1. 1 Chop the onion and sage very finely.
  2. 2 Mix the onion, sage, bread crumbs, butter, salt, pepper, and egg yolk thoroughly to create the stuffing.
  3. 3 Stuff the duck cavity with the mixture.
  4. 4 Roast in a hot oven for 45 to 60 minutes, depending on size, until the feet are crisp.
  5. 5 Serve with sage and onion sauce or other preferred accompaniments.
