Roast Duck With Sage Onion Stuffing
Ingredients
- 1 duck, cleaned and dried
- 1 oz onion, finely chopped
- 0.5 oz green sage, finely chopped
- 0.75 cup bread crumbs
- 1 tbsp butter
- Salt and black pepper to taste
- Cayenne pepper (optional)
- 1 egg yolk
Method
- 1 Chop the onion and sage very finely.
- 2 Mix the onion, sage, bread crumbs, butter, salt, pepper, and egg yolk thoroughly to create the stuffing.
- 3 Stuff the duck cavity with the mixture.
- 4 Roast in a hot oven for 45 to 60 minutes, depending on size, until the feet are crisp.
- 5 Serve with sage and onion sauce or other preferred accompaniments.
