Roast Duck With Sage Onion Stuffing And Gravy
Ingredients
- 1 duck
- Sage and onion stuffing
- 1 pint water
- 1 oz flour
- 1 onion
- 1 apple
- 1/4 lb gravy beef or 2-3 bones
- Pepper and salt
- Burnt sugar
- Port wine (optional)
- Apple or tomato sauce (for serving)
Method
- 1 Stuff the duck with sage and onion forcemeat and truss it nicely.
- 2 Roast the duck for 45 minutes to 1 hour, depending on its size.
- 3 Simmer giblets, beef or bones, onion, apple, pepper, salt, and water for two hours to make the gravy.
- 4 Thicken the gravy with flour and color carefully with burnt sugar.
- 5 Pour a little gravy around the duck and serve the rest in a tureen, adding port wine if desired.
