Roast Beef Tenderloin With Parsley Sauce
Ingredients
- 1 beef fillet (tenderloin)
- Sweet butter, for basting
- 2 tbsp butter, for sauce
- 1/4 cup strong broth
- 1 tbsp vinegar
- Gravy, for serving
- 1/4 cup fresh parsley, chopped
- 1 tbsp mixed sweet herbs, chopped
- 3-4 egg yolks
- 1/8 tsp black pepper
- 1 tsp orange peel, grated
- 1 tsp onion, minced
Method
- 1 Place the beef fillet on a roasting rack or broach. Roast in a moderate oven (350°F), basting frequently with sweet butter.
- 2 While the beef roasts, combine parsley, sweet herbs, egg yolks, pepper, orange peel, and minced onion in a saucepan.
- 3 Add butter, vinegar, gravy, and strong broth to the herb mixture. Simmer gently until thickened into a sauce.
- 4 Remove the beef from the oven and let it rest. Pour the prepared sauce over the sliced beef before serving.
