Rinsed Oyster Chowder With Milk

Ingredients

  • 50 oysters
  • 1 pitcher cold water
  • 1 pint water
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 quart milk
  • 1 tsp salt
  • pepper to taste

Method

  1. 1 Drain oysters in a colander, rinse with cold water, then place in a hot kettle. Cover and let stand for a few minutes.
  2. 2 Add one pint of water to the kettle.
  3. 3 Rub butter and flour together to form a paste. Add a little soup liquid to smooth it, then stir into the kettle with the milk.
  4. 4 Stir constantly until the soup begins to thicken. Season with salt and pepper to taste.
