Rinsed Oyster Chowder With Milk
Ingredients
- 50 oysters
- 1 pitcher cold water
- 1 pint water
- 1 tbsp butter
- 1 tbsp flour
- 1 quart milk
- 1 tsp salt
- pepper to taste
Method
- 1 Drain oysters in a colander, rinse with cold water, then place in a hot kettle. Cover and let stand for a few minutes.
- 2 Add one pint of water to the kettle.
- 3 Rub butter and flour together to form a paste. Add a little soup liquid to smooth it, then stir into the kettle with the milk.
- 4 Stir constantly until the soup begins to thicken. Season with salt and pepper to taste.
