Rich Spiced Fruit Cake With Brandy

Ingredients

  • 1 pound all-purpose flour
  • 1 pound granulated sugar
  • 1 pound unsalted butter
  • ½ pound candied citron, sliced
  • 4 pounds currants
  • 4 pounds raisins, stoned and chopped
  • 9 large eggs, separated
  • 1 tablespoon ground cinnamon
  • 1 tablespoon ground mace
  • 1 tablespoon ground nutmeg
  • ¾ cup brandy

Method

  1. 1 Toss the currants and raisins with the flour until coated. Set aside.
  2. 2 In a bowl, mix the cinnamon, mace, nutmeg, and sugar.
  3. 3 Cream the butter and sugar mixture until light and fluffy. Beat in the egg yolks one at a time.
  4. 4 Fold in the whipped egg whites and brandy. Gently mix in the floured fruit and flour until combined.
  5. 5 Pour batter into two large tins lined with double parchment paper. Bake at 350°F for 3 hours.
