Rich Milk Cream Of Mushroom Soup
Ingredients
- 1 pound mushrooms
- 1 cup boiling water
- 2 large heaping tablespoons butter
- 2 heaping tablespoons flour
- 1 quart rich milk
- 1 whole clove garlic
- Salt and pepper to taste
Method
- 1 Wash mushrooms, remove skins and stems. Boil skins and stems in 1 cup boiling water for 10 minutes, then strain.
- 2 Chop mushroom flaps finely and cook in the strained mushroom water until tender. Press the mixture through a fine sieve.
- 3 Melt butter in a saucepan. Stir in flour until smooth.
- 4 Add milk and garlic clove. Cook until boiling and thickened.
- 5 Stir in the sieved mushroom mixture. Boil once, remove garlic, season with salt and pepper, and serve.
