Rich Milk Cream Of Mushroom Soup

Ingredients

  • 1 pound mushrooms
  • 1 cup boiling water
  • 2 large heaping tablespoons butter
  • 2 heaping tablespoons flour
  • 1 quart rich milk
  • 1 whole clove garlic
  • Salt and pepper to taste

Method

  1. 1 Wash mushrooms, remove skins and stems. Boil skins and stems in 1 cup boiling water for 10 minutes, then strain.
  2. 2 Chop mushroom flaps finely and cook in the strained mushroom water until tender. Press the mixture through a fine sieve.
  3. 3 Melt butter in a saucepan. Stir in flour until smooth.
  4. 4 Add milk and garlic clove. Cook until boiling and thickened.
  5. 5 Stir in the sieved mushroom mixture. Boil once, remove garlic, season with salt and pepper, and serve.
