Rich Christmas Fruit Cake With Almonds
Ingredients
- 2.5 lbs fresh butter
- 24 eggs
- 3 lbs flour
- 1.5 lbs sugar
- 1 oz mixed spice
- 4 lbs currants
- 0.5 jar raisins
- 0.5 lb sweet almonds
- 0.25 lb citron
- 0.75 orange and lemon (zest/juice)
- 0.25 cup brandy
- 1 nutmeg
Method
- 1 Work the butter to a cream.
- 2 Beat the sugar well into the butter.
- 3 Whisk the eggs for half an hour.
- 4 Mix the eggs with the butter and sugar.
- 5 Add the spice and flour, then mix in the brandy, fruit, and sweetmeats.
- 6 Bake in a moderate oven (350°F) for three hours.
