Ingredients

  • 2 lbs fine flour
  • 1.5 lbs good salt butter
  • 3 egg yolks
  • 1 pint spring water

Method

  1. 1 Sift 2 lbs fine flour into a bowl.
  2. 2 Cut 1.5 lbs salt butter into small pieces and wash well in cold water.
  3. 3 Rub the butter and flour together gently.
  4. 4 Mix in 3 egg yolks beaten with 1 pint spring water.
  5. 5 Roll out the dough, fold it in half three times, and it is ready.
