  • 1/2 lb rice
  • hot milk
  • 3 egg yolks
  • 1 lump fresh butter (size of a pullet's egg)
  • powdered sugar
  • 3 egg whites
  • yellow plums
  • 1/2 bottle light white wine
  • spice

Method

  1. 1 Cook rice in hot milk until tender and absorbed.
  2. 2 Beat egg yolks with butter, powdered sugar, and well-beaten egg whites.
  3. 3 Mix rice into egg mixture, place in a mold, and cook gently for 25 minutes.
  4. 4 Skin and stone plums, then heat in wine seasoned with spice.
  5. 5 Turn out rice, top with plums, and pour strained wine sauce around.
