Rice Pudding With Spiced Plum Wine Sauce
Ingredients
- 1/2 lb rice
- hot milk
- 3 egg yolks
- 1 lump fresh butter (size of a pullet's egg)
- powdered sugar
- 3 egg whites
- yellow plums
- 1/2 bottle light white wine
- spice
Method
- 1 Cook rice in hot milk until tender and absorbed.
- 2 Beat egg yolks with butter, powdered sugar, and well-beaten egg whites.
- 3 Mix rice into egg mixture, place in a mold, and cook gently for 25 minutes.
- 4 Skin and stone plums, then heat in wine seasoned with spice.
- 5 Turn out rice, top with plums, and pour strained wine sauce around.
