Rice Pudding With Raisins And Orange Peel
Ingredients
- 3 tablespoons Carolina rice
- 1 tablespoon butter
- 1 cup milk
- sugar to taste
- a few raisins
- chopped orange peel
- crystallized cherries or preserved fruit
- 1 egg yolk
- 1 cup milk (for sauce)
- sugar (for sauce)
- vanilla extract
- 1 tablespoon cornstarch
- water (for cornstarch slurry)
Method
- 1 Soak rice in a little water with butter until absorbed.
- 2 Add 1 cup milk, sugar, raisins, orange peel, and cherries; cook until creamy.
- 3 Stir in 1 egg yolk, pour into a mold, and cool.
- 4 Boil 1 cup milk with sugar and vanilla.
- 5 Mix cornstarch with water, stir into boiling milk, and cook briefly.
- 6 Remove from heat, stir in 1 egg yolk, and pour sauce over the rice.
