Rice Pudding Puff Pastry Tart

Ingredients

  • 1 cup cooked rice
  • 2 tbsp butter
  • 2 tbsp sugar
  • 1/4 tsp nutmeg
  • 1 pinch salt
  • 1 tbsp rose water
  • 6-8 egg yolks
  • 1 sheet puff pastry
  • 2 tbsp currants (optional)
  • 1/4 tsp cinnamon (optional)
  • 2 tbsp icing sugar
  • 2 tbsp crushed biscuits

Method

  1. 1 Boil rice until tender, drain, and place in a bowl. Stir in butter, sugar, nutmeg, salt, rose water, and egg yolks. Mix well.
  2. 2 Line a small dish with puff pastry. Fill with the rice mixture and seal the top with another layer of pastry.
  3. 3 Bake at 375°F for 25-30 minutes until golden brown.
  4. 4 Once baked, brush with icing sugar and sprinkle with crushed biscuits and a dusting of sugar.
