Rice Pudding Puff Pastry Tart
Ingredients
- 1 cup cooked rice
- 2 tbsp butter
- 2 tbsp sugar
- 1/4 tsp nutmeg
- 1 pinch salt
- 1 tbsp rose water
- 6-8 egg yolks
- 1 sheet puff pastry
- 2 tbsp currants (optional)
- 1/4 tsp cinnamon (optional)
- 2 tbsp icing sugar
- 2 tbsp crushed biscuits
Method
- 1 Boil rice until tender, drain, and place in a bowl. Stir in butter, sugar, nutmeg, salt, rose water, and egg yolks. Mix well.
- 2 Line a small dish with puff pastry. Fill with the rice mixture and seal the top with another layer of pastry.
- 3 Bake at 375°F for 25-30 minutes until golden brown.
- 4 Once baked, brush with icing sugar and sprinkle with crushed biscuits and a dusting of sugar.
