Rice Muffins With Butter
Ingredients
- ½ cup rice
- 1 tbsp butter
- 1 egg
- salt
- 1½ cups flour
- ½ tsp baking powder
- 1½ cups milk
Method
- 1 Boil rice in salted water for 30 minutes, then drain well.
- 2 Measure 4 heaping tablespoons of hot rice into a bowl and stir in butter.
- 3 Beat the egg lightly, then add it to the rice mixture with salt.
- 4 Sift flour and baking powder together, then stir alternately with milk into the rice mixture.
- 5 Pour batter into heated, buttered muffin rings or gem pans and bake for 20 minutes.
