Rice Muffins With Butter

Ingredients

  • ½ cup rice
  • 1 tbsp butter
  • 1 egg
  • salt
  • 1½ cups flour
  • ½ tsp baking powder
  • 1½ cups milk

Method

  1. 1 Boil rice in salted water for 30 minutes, then drain well.
  2. 2 Measure 4 heaping tablespoons of hot rice into a bowl and stir in butter.
  3. 3 Beat the egg lightly, then add it to the rice mixture with salt.
  4. 4 Sift flour and baking powder together, then stir alternately with milk into the rice mixture.
  5. 5 Pour batter into heated, buttered muffin rings or gem pans and bake for 20 minutes.
