Rice Crust Pizza With Mozzarella
Ingredients
- 16 ounces cooked rice
- 1 cup mozzarella cheese, part skim, grated
- 1 egg
- 1/4 teaspoon salt
- 2 cups tomato puree
Method
- 1 Heat oven to 350°F. Grease a 12-inch pizza pan or baking sheet.
- 2 Cook rice according to package directions; set aside.
- 3 In a mixing bowl, beat the egg. Add 2 cups cooked rice, 1 cup grated cheese, and salt. Mix well.
- 4 Spread the rice mixture onto the prepared pan, pressing firmly and forming a slightly raised edge.
- 5 Spread tomato puree evenly over the rice crust. Bake for 25 minutes.
- 6 Remove from oven, sprinkle with remaining cheese, and bake 5 minutes longer until cheese melts. Cut into 12 slices.
