Rhubarb Pie With Meringue

Ingredients

  • 1 cup sugar
  • 2 egg yolks
  • 1 pint rhubarb, chopped
  • 1 pie crust
  • 2 egg whites
  • 1 tablespoon sugar

Method

  1. 1 Preheat oven to 350°F. Beat sugar and egg yolks together until well combined.
  2. 2 Stir in the chopped rhubarb. Pour into the pie crust.
  3. 3 Bake at 350°F for 30-35 minutes until the filling is set.
  4. 4 Whisk egg whites with 1 tablespoon sugar until stiff peaks form.
  5. 5 Spread the meringue over the hot pie and return to oven for 2-3 minutes to brown.
