Rhubarb Pie With Meringue
Ingredients
- 1 cup sugar
- 2 egg yolks
- 1 pint rhubarb, chopped
- 1 pie crust
- 2 egg whites
- 1 tablespoon sugar
Method
- 1 Preheat oven to 350°F. Beat sugar and egg yolks together until well combined.
- 2 Stir in the chopped rhubarb. Pour into the pie crust.
- 3 Bake at 350°F for 30-35 minutes until the filling is set.
- 4 Whisk egg whites with 1 tablespoon sugar until stiff peaks form.
- 5 Spread the meringue over the hot pie and return to oven for 2-3 minutes to brown.
