Rhubarb Pastry Pockets

Ingredients

  • pastry dough
  • rhubarb
  • 2 tablespoons sugar
  • egg wash

Method

  1. 1 Roll pastry to 1/4 inch thickness and cut into 4-inch squares.
  2. 2 Place 1/2-inch rhubarb pieces and 2 tablespoons sugar on each square.
  3. 3 Fold dough over filling, pressing edges tightly to seal.
  4. 4 Brush with egg wash and bake in a slow oven (300°F) for 30 minutes.
