Rhubarb Meringue Pie With Flour

Ingredients

  • 3 cups diced rhubarb
  • 1½ cups sugar
  • 3 tbsp flour
  • ¼ tsp salt
  • 1 tbsp lemon juice
  • 2 eggs, separated
  • 1 9-inch pie shell

Method

  1. 1 Cut rhubarb into small pieces and arrange in an unbaked pie shell.
  2. 2 Combine sugar and flour, add egg yolks and lemon juice, and stir into a smooth paste.
  3. 3 Pour the mixture over the rhubarb.
  4. 4 Cover with meringue made from the egg whites.
  5. 5 Bake at 425°F for 10 minutes, then reduce heat to 325°F and bake for 30 minutes.
