Rhubarb Fig Jam
Ingredients
- 5 lbs rhubarb, cut into 1-inch pieces
- 1 lb figs
- 4 lbs sugar
- Zest and juice of 1 lemon
- Nut meats (optional)
Method
- 1 Cut rhubarb into 1-inch pieces without peeling. Add figs, sugar, lemon zest, and lemon juice. Let stand overnight.
- 2 In the morning, simmer the mixture for one hour. Add nut meats if desired.
