Rhubarb Fig Jam

Ingredients

  • 5 lbs rhubarb, cut into 1-inch pieces
  • 1 lb figs
  • 4 lbs sugar
  • Zest and juice of 1 lemon
  • Nut meats (optional)

Method

  1. 1 Cut rhubarb into 1-inch pieces without peeling. Add figs, sugar, lemon zest, and lemon juice. Let stand overnight.
  2. 2 In the morning, simmer the mixture for one hour. Add nut meats if desired.
