Rhubarb Custard Tart
Ingredients
- 3-4 dozen stalks rhubarb
- Peel of 1 lemon
- 1 small piece cinnamon
- 2 cloves
- Moist sugar to taste
- Peel of 1 lemon
- ½ nutmeg, grated
- ¼ lb butter
- 4 egg yolks
- 1 egg white
- Good puff pastry
Method
- 1 Clean rhubarb stalks and place in a stew-pan with lemon peel, cinnamon, cloves, and enough sugar to sweeten.
- 2 Cook over fire, reducing the mixture to a marmalade consistency. Pass through a fine sieve.
- 3 Stir in lemon peel, grated nutmeg, butter, egg yolks, and egg white until well mixed.
- 4 Line a pie dish with puff pastry, fill with the rhubarb mixture, and bake for 30 minutes.
