Rhubarb Custard Tart

Ingredients

  • 3-4 dozen stalks rhubarb
  • Peel of 1 lemon
  • 1 small piece cinnamon
  • 2 cloves
  • Moist sugar to taste
  • Peel of 1 lemon
  • ½ nutmeg, grated
  • ¼ lb butter
  • 4 egg yolks
  • 1 egg white
  • Good puff pastry

Method

  1. 1 Clean rhubarb stalks and place in a stew-pan with lemon peel, cinnamon, cloves, and enough sugar to sweeten.
  2. 2 Cook over fire, reducing the mixture to a marmalade consistency. Pass through a fine sieve.
  3. 3 Stir in lemon peel, grated nutmeg, butter, egg yolks, and egg white until well mixed.
  4. 4 Line a pie dish with puff pastry, fill with the rhubarb mixture, and bake for 30 minutes.
