Rhubarb Bread Pudding With Meringue
Ingredients
- plain stale cake or bread, sliced
- butter, for greasing
- rhubarb, stewed and sweetened
- 2 egg whites
- 4 tbsp sugar, divided
Method
- 1 Butter a baking dish and line it with slices of plain stale cake or bread.
- 2 Fill the dish with sweetened stewed rhubarb.
- 3 Cover and bake in a 325°F oven for 30 minutes.
- 4 Beat egg whites until stiff, then gradually add 4 tablespoons of sugar.
- 5 Remove pudding from oven, top with meringue, and brown in the oven.
