Rhubarb Bread Pudding With Meringue

Ingredients

  • plain stale cake or bread, sliced
  • butter, for greasing
  • rhubarb, stewed and sweetened
  • 2 egg whites
  • 4 tbsp sugar, divided

Method

  1. 1 Butter a baking dish and line it with slices of plain stale cake or bread.
  2. 2 Fill the dish with sweetened stewed rhubarb.
  3. 3 Cover and bake in a 325°F oven for 30 minutes.
  4. 4 Beat egg whites until stiff, then gradually add 4 tablespoons of sugar.
  5. 5 Remove pudding from oven, top with meringue, and brown in the oven.
