Rehydrated Ground Corn Pudding

Ingredients

  • 1 cup dried corn (ground in food chopper)
  • 2 cups hot milk
  • 2 eggs, beaten
  • 1 cup milk
  • 1 tablespoon butter
  • 2 tablespoons sugar
  • salt to taste

Method

  1. 1 Pour 2 cups of hot milk over 1 cup of dried corn (ground in a food chopper) and let stand for about an hour.
  2. 2 Stir in 2 beaten eggs, 1 cup milk, 1 tablespoon butter, 2 tablespoons sugar, and salt to taste.
  3. 3 Bake in a 350°F oven for 30 minutes.
