  • 2 teaspoons vegetable oil
  • 2 small onions, chopped
  • 2 cups refried beans
  • 8 taco shells or flour tortillas
  • 1/4 head lettuce, chopped
  • 1 medium tomato, chopped
  • 1 cup cheddar cheese, shredded
  • Taco sauce, optional

Method

  1. 1 Heat oil in a skillet over medium heat. Add chopped onion and cook until soft.
  2. 2 Add refried beans to the skillet and heat thoroughly, stirring occasionally.
  3. 3 Spread the warm bean mixture into taco shells or onto flour tortillas.
  4. 4 Top with shredded cheese, chopped lettuce, diced tomatoes, and taco sauce as desired.
