Refried Bean Tacos
Ingredients
- 2 teaspoons vegetable oil
- 2 small onions, chopped
- 2 cups refried beans
- 8 taco shells or flour tortillas
- 1/4 head lettuce, chopped
- 1 medium tomato, chopped
- 1 cup cheddar cheese, shredded
- Taco sauce, optional
Method
- 1 Heat oil in a skillet over medium heat. Add chopped onion and cook until soft.
- 2 Add refried beans to the skillet and heat thoroughly, stirring occasionally.
- 3 Spread the warm bean mixture into taco shells or onto flour tortillas.
- 4 Top with shredded cheese, chopped lettuce, diced tomatoes, and taco sauce as desired.
