Red Wine Stewed Trout With Herbs
Ingredients
- 1 trout, cleaned and dried
- ½ onion, sliced
- 1 tbsp fresh parsley, chopped
- 2 cloves
- 1 blade of mace
- 2 bay leaves
- Fresh thyme
- Salt and pepper to taste
- 1 pint meat stock
- ¼ cup claret or port wine
- 1 tbsp flour
- 1 tbsp butter
Method
- 1 Place the trout in a saucepan with the sliced onion, parsley, cloves, mace, bay leaves, thyme, salt, and pepper.
- 2 Add the meat stock and wine, then simmer gently for 30 minutes.
- 3 Remove the fish and set aside.
- 4 Thicken the cooking liquid by stirring in a mixture of flour and butter.
- 5 Stir constantly for 5 minutes until the sauce thickens, then pour over the fish and serve.
