Red Wine Stewed Trout With Herbs

Ingredients

  • 1 trout, cleaned and dried
  • ½ onion, sliced
  • 1 tbsp fresh parsley, chopped
  • 2 cloves
  • 1 blade of mace
  • 2 bay leaves
  • Fresh thyme
  • Salt and pepper to taste
  • 1 pint meat stock
  • ¼ cup claret or port wine
  • 1 tbsp flour
  • 1 tbsp butter

Method

  1. 1 Place the trout in a saucepan with the sliced onion, parsley, cloves, mace, bay leaves, thyme, salt, and pepper.
  2. 2 Add the meat stock and wine, then simmer gently for 30 minutes.
  3. 3 Remove the fish and set aside.
  4. 4 Thicken the cooking liquid by stirring in a mixture of flour and butter.
  5. 5 Stir constantly for 5 minutes until the sauce thickens, then pour over the fish and serve.
