Red Wine Stewed Beef With Bacon

Ingredients

  • 1 piece beef (good cut)
  • bacon or ham, cut into small pieces
  • salt and pepper
  • cinnamon
  • flour
  • beef fat
  • 1 medium onion, chopped
  • butter
  • water
  • red wine

Method

  1. 1 Beat and flatten the meat. Lard it by inserting small pieces of bacon or ham into slits. Season with salt, pepper, and a pinch of cinnamon. Sprinkle flour over the meat.
  2. 2 In a saucepan, brown chopped beef fat and the onion in butter. Remove the browned onion and set aside.
  3. 3 Add more butter to the pan. Brown the meat on all sides in the melted butter.
  4. 4 Add half water and half red wine to the pan. Cover tightly with a lid and greased paper. Simmer on very low heat for 5 to 6 hours.
  5. 5 Remove the stew and let it cool. Strain the gravy through a sieve, return it to the heat, and serve hot.
