Red Wine Orange Salmon

Ingredients

  • 1 salmon fillet or steak
  • 1 cup red wine
  • 1 large mace blade
  • ¼ tsp freshly grated nutmeg
  • ½ tsp salt
  • 1 tbsp wine vinegar
  • 1 orange, sliced
  • 2 tbsp butter
  • 1 slice stale white bread, finely crumbled

Method

  1. 1 Fry the salmon fillet whole in a skillet until cooked through.
  2. 2 In a separate dish over low heat, combine red wine, mace, nutmeg, salt, vinegar, orange slices, and butter to create a sauce.
  3. 3 Simmer the sauce until it thickens slightly.
  4. 4 Place the fried salmon on toasted bread slices (sippets).
  5. 5 Pour the thickened sauce over the fish, garnish with remaining orange slices and crumbled bread.
