Red Wine Beef Stew With Egg Yolk

Ingredients

  • 1 piece butter
  • 1 onion, cut into pieces
  • A few cloves
  • Salt and pepper to taste
  • 1 tablespoon shredded parsley
  • Good gravy or meat juice and water
  • Cold meat, preferably underdone
  • 1 cut onion (for rubbing)
  • 1 glass red wine (such as Burgundy)
  • 1 egg yolk

Method

  1. 1 Melt butter in a stewpan with onion pieces, cloves, salt, pepper, and parsley. Add gravy or meat juice and water.
  2. 2 Add cold, preferably underdone, meat to the sauce and simmer for 15 minutes.
  3. 3 While simmering, rub the bottom of the serving dish with a cut onion.
  4. 4 Mix red wine with the egg yolk, then stir this mixture into the stew.
  5. 5 Serve immediately in the prepared dish.
