Red Wine Beef Stew With Egg Yolk
Ingredients
- 1 piece butter
- 1 onion, cut into pieces
- A few cloves
- Salt and pepper to taste
- 1 tablespoon shredded parsley
- Good gravy or meat juice and water
- Cold meat, preferably underdone
- 1 cut onion (for rubbing)
- 1 glass red wine (such as Burgundy)
- 1 egg yolk
Method
- 1 Melt butter in a stewpan with onion pieces, cloves, salt, pepper, and parsley. Add gravy or meat juice and water.
- 2 Add cold, preferably underdone, meat to the sauce and simmer for 15 minutes.
- 3 While simmering, rub the bottom of the serving dish with a cut onion.
- 4 Mix red wine with the egg yolk, then stir this mixture into the stew.
- 5 Serve immediately in the prepared dish.
