Red Wine Baked Trout

  • 1 salmon trout, cleaned
  • seasoned breadcrumbs
  • salt
  • pepper
  • grated nutmeg
  • 1 bunch sweet herbs
  • 1 clove garlic
  • 2 tablespoons butter
  • claret (red wine)

Method

  1. 1 Prepare and clean the salmon trout. Stuff it with seasoned breadcrumbs.
  2. 2 Place the fish in a fish-kettle on the grate. Sprinkle with salt, pepper, and grated nutmeg.
  3. 3 Add sweet herbs, garlic, and butter. Pour in enough claret to cover the fish.
  4. 4 Simmer until the fish is cooked through. Drain the fish and set aside.
  5. 5 Strain the cooking liquid. Thicken the sauce if desired, then serve it separately with the fish.
