Red Wine Baked Trout
Ingredients
- 1 salmon trout, cleaned
- seasoned breadcrumbs
- salt
- pepper
- grated nutmeg
- 1 bunch sweet herbs
- 1 clove garlic
- 2 tablespoons butter
- claret (red wine)
Method
- 1 Prepare and clean the salmon trout. Stuff it with seasoned breadcrumbs.
- 2 Place the fish in a fish-kettle on the grate. Sprinkle with salt, pepper, and grated nutmeg.
- 3 Add sweet herbs, garlic, and butter. Pour in enough claret to cover the fish.
- 4 Simmer until the fish is cooked through. Drain the fish and set aside.
- 5 Strain the cooking liquid. Thicken the sauce if desired, then serve it separately with the fish.
