Red Potato Salad With Bell Peppers

Ingredients

  • 1/2 cup small red potatoes, quartered
  • 1 1/2 teaspoons light Italian dressing
  • 1 tablespoon spicy brown mustard
  • 3/4 teaspoon chopped fresh parsley
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped red bell pepper
  • green onion, sliced

Method

  1. 1 Cook potatoes in boiling water over high heat until tender, about 10 minutes. Drain well and let cool.
  2. 2 Place potatoes in a medium bowl. In a small bowl, combine dressing, mustard, parsley, garlic salt, and black pepper.
  3. 3 Pour dressing mixture over potatoes and toss well to coat.
  4. 4 Carefully stir in chopped bell peppers and sliced green onions. Cover and chill until ready to serve.
