Red Potato Salad With Bell Peppers
Ingredients
- 1/2 cup small red potatoes, quartered
- 1 1/2 teaspoons light Italian dressing
- 1 tablespoon spicy brown mustard
- 3/4 teaspoon chopped fresh parsley
- 1/4 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- green onion, sliced
Method
- 1 Cook potatoes in boiling water over high heat until tender, about 10 minutes. Drain well and let cool.
- 2 Place potatoes in a medium bowl. In a small bowl, combine dressing, mustard, parsley, garlic salt, and black pepper.
- 3 Pour dressing mixture over potatoes and toss well to coat.
- 4 Carefully stir in chopped bell peppers and sliced green onions. Cover and chill until ready to serve.
