Red Potato And Kale Frittata

Ingredients

  • 4 large eggs
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 medium unpeeled red potato
  • 1 tablespoon olive oil
  • 1/4 cup Italian kale or other kale variety
  • 1/2 chopped onion
  • 1 chopped red bell pepper

Method

  1. 1 Beat eggs, pepper, and salt in a large bowl and set aside.
  2. 2 Microwave potatoes until slightly soft, then cube. Alternatively, cube and boil for 5 minutes until slightly soft, then drain.
  3. 3 Chop kale, onion, and red bell pepper. Mix vegetables together.
  4. 4 Heat olive oil in a 10-inch non-stick skillet. Sauté vegetables for 5-8 minutes, then add to eggs and mix well.
  5. 5 Pour mixture into the skillet. Cook over low-medium heat until almost set, about 8-10 minutes.
  6. 6 Cover and let sit until eggs are completely set, about 5 minutes. Ensure internal temperature reaches 160°F.
