Red Potato And Kale Frittata
Ingredients
- 4 large eggs
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/2 medium unpeeled red potato
- 1 tablespoon olive oil
- 1/4 cup Italian kale or other kale variety
- 1/2 chopped onion
- 1 chopped red bell pepper
Method
- 1 Beat eggs, pepper, and salt in a large bowl and set aside.
- 2 Microwave potatoes until slightly soft, then cube. Alternatively, cube and boil for 5 minutes until slightly soft, then drain.
- 3 Chop kale, onion, and red bell pepper. Mix vegetables together.
- 4 Heat olive oil in a 10-inch non-stick skillet. Sauté vegetables for 5-8 minutes, then add to eggs and mix well.
- 5 Pour mixture into the skillet. Cook over low-medium heat until almost set, about 8-10 minutes.
- 6 Cover and let sit until eggs are completely set, about 5 minutes. Ensure internal temperature reaches 160°F.
