Red Pepper Creamed Clams
Ingredients
- 2 dozen hard clams, chopped
- 2 tbsp butter
- 2 tbsp flour
- 1/2 cup clam juice
- Red pepper to taste
- 1/2 cup cream
Method
- 1 Chop 2 dozen hard clams finely.
- 2 Melt 2 tbsp butter in a saucepan, stir in 2 tbsp flour, and cook until smooth.
- 3 Add clams and 1/2 cup clam juice. Season with red pepper and simmer for 10 minutes.
- 4 Stir in 1/2 cup cream, bring to a boil once, and serve immediately.
