Red Pepper Creamed Clams

Ingredients

  • 2 dozen hard clams, chopped
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 cup clam juice
  • Red pepper to taste
  • 1/2 cup cream

Method

  1. 1 Chop 2 dozen hard clams finely.
  2. 2 Melt 2 tbsp butter in a saucepan, stir in 2 tbsp flour, and cook until smooth.
  3. 3 Add clams and 1/2 cup clam juice. Season with red pepper and simmer for 10 minutes.
  4. 4 Stir in 1/2 cup cream, bring to a boil once, and serve immediately.
