Red Cabbage Pickled With Barberries And Ginger

Ingredients

  • 2 medium red cabbages
  • ½ lb salt
  • 1 quart vinegar
  • 1 tbsp barberries
  • 3 small pieces ginger
  • ½ oz black pepper
  • ¼ oz cloves

Method

  1. 1 Remove outer leaves from cabbages and shred them very finely.
  2. 2 Mix shredded cabbage with salt, place in a thin cloth, and hang for 12 hours to draw out moisture.
  3. 3 Pack the drained cabbage into small jars.
  4. 4 Boil vinegar with barberries, ginger, pepper, and cloves. Let the mixture cool completely.
  5. 5 Pour the cold spiced vinegar over the cabbage, seal jars tightly, and store.
