Red Cabbage Pickled With Barberries And Ginger
Ingredients
- 2 medium red cabbages
- ½ lb salt
- 1 quart vinegar
- 1 tbsp barberries
- 3 small pieces ginger
- ½ oz black pepper
- ¼ oz cloves
Method
- 1 Remove outer leaves from cabbages and shred them very finely.
- 2 Mix shredded cabbage with salt, place in a thin cloth, and hang for 12 hours to draw out moisture.
- 3 Pack the drained cabbage into small jars.
- 4 Boil vinegar with barberries, ginger, pepper, and cloves. Let the mixture cool completely.
- 5 Pour the cold spiced vinegar over the cabbage, seal jars tightly, and store.
