Raspberry Rhubarb Orange Jam

Ingredients

  • 3 lbs rhubarb
  • 2½ cups sugar
  • ½ cup water
  • 2 oranges (juice and grated rind)
  • 2 cups raspberries

Method

  1. 1 Skin and cut rhubarb into ½-inch pieces.
  2. 2 Combine rhubarb, water, sugar, orange juice, and grated peel in a pot.
  3. 3 Cook over medium heat, stirring frequently to prevent scorching, for 30 minutes or until the mixture is clear.
  4. 4 Stir in raspberries.
  5. 5 Pack the hot jam into sterile jelly glasses and seal immediately.
