Raspberry Rhubarb Orange Jam
Ingredients
- 3 lbs rhubarb
- 2½ cups sugar
- ½ cup water
- 2 oranges (juice and grated rind)
- 2 cups raspberries
Method
- 1 Skin and cut rhubarb into ½-inch pieces.
- 2 Combine rhubarb, water, sugar, orange juice, and grated peel in a pot.
- 3 Cook over medium heat, stirring frequently to prevent scorching, for 30 minutes or until the mixture is clear.
- 4 Stir in raspberries.
- 5 Pack the hot jam into sterile jelly glasses and seal immediately.
