Raspberry Preserve

Ingredients

  • 1 ½ cups raspberry juice (from red and white raspberries)
  • 2 cups sugar
  • ¾ cup large red raspberries
  • 1 tsp brandy (for wetting papers)

Method

  1. 1 Boil the raspberry juice and sugar together, skimming as needed.
  2. 2 Add the whole raspberries and boil rapidly for 15 minutes until clear and jellied.
  3. 3 Strain the mixture to remove seeds, returning the liquid to the fruit.
  4. 4 Place the fruit and jelly into pots or glasses while warm.
  5. 5 Stir occasionally as they cool to prevent fruit from settling at the top.
  6. 6 Once cold, cover with papers wetted with brandy and dried.
