Raspberry Cream Sandwich Meringues
Ingredients
- 3 egg whites
- 1¼ cups granulated sugar
- 3 teaspoons baking powder
- ¼ teaspoon vanilla extract
- Sweetened whipped cream
- Crushed raspberries or strawberries
- Ice cream
Method
- 1 Beat egg whites until stiff and dry. Gradually add two-thirds of the sugar and beat until the mixture holds its shape.
- 2 Fold in the remaining sugar sifted with baking powder, then add vanilla extract.
- 3 Drop by spoonfuls onto unglazed paper and bake in a slow oven (300°F) for 30 minutes.
- 4 Remove any soft parts from the center of the meringues and return them to the oven to dry out after turning off the heat.
- 5 Sandwich two meringues together with sweetened whipped cream and crushed raspberries, strawberries, or ice cream.
