Raspberry Cream Sandwich Meringues

Ingredients

  • 3 egg whites
  • 1¼ cups granulated sugar
  • 3 teaspoons baking powder
  • ¼ teaspoon vanilla extract
  • Sweetened whipped cream
  • Crushed raspberries or strawberries
  • Ice cream

Method

  1. 1 Beat egg whites until stiff and dry. Gradually add two-thirds of the sugar and beat until the mixture holds its shape.
  2. 2 Fold in the remaining sugar sifted with baking powder, then add vanilla extract.
  3. 3 Drop by spoonfuls onto unglazed paper and bake in a slow oven (300°F) for 30 minutes.
  4. 4 Remove any soft parts from the center of the meringues and return them to the oven to dry out after turning off the heat.
  5. 5 Sandwich two meringues together with sweetened whipped cream and crushed raspberries, strawberries, or ice cream.
