Ranch Cream Cheese Vegetable Pinwheels
Ingredients
- 2 tablespoons low-fat whipped cream cheese
- 1/2 teaspoon ranch seasoning mix
- 1 flour tortilla
- 1/4 cup chopped broccoli
- 1/4 cup grated carrot
- 1/4 cup small strips zucchini
- 1/4 cup small strips yellow summer squash
- 1/2 cup diced tomato
- 1/8 cup diced green bell pepper
- 2 tablespoons chopped chives
Method
- 1 Stir ranch seasoning into cream cheese and chill.
- 2 Wash and chop all vegetables.
- 3 Steam broccoli in microwave for 1 minute with 1 tablespoon water.
- 4 Spread cream cheese onto tortilla, leaving a 1-inch border.
- 5 Sprinkle vegetables over cream cheese and roll tortilla tightly.
- 6 Chill for 1-2 hours, then slice into circles and serve.
