Ingredients

  • 2 tablespoons low-fat whipped cream cheese
  • 1/2 teaspoon ranch seasoning mix
  • 1 flour tortilla
  • 1/4 cup chopped broccoli
  • 1/4 cup grated carrot
  • 1/4 cup small strips zucchini
  • 1/4 cup small strips yellow summer squash
  • 1/2 cup diced tomato
  • 1/8 cup diced green bell pepper
  • 2 tablespoons chopped chives

Method

  1. 1 Stir ranch seasoning into cream cheese and chill.
  2. 2 Wash and chop all vegetables.
  3. 3 Steam broccoli in microwave for 1 minute with 1 tablespoon water.
  4. 4 Spread cream cheese onto tortilla, leaving a 1-inch border.
  5. 5 Sprinkle vegetables over cream cheese and roll tortilla tightly.
