Raisin Spice Rye Cornmeal Bread

  • 1 cup corn syrup
  • 2 cups water
  • 2 cups raisins
  • 2 tablespoons fat
  • 1 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1.5 cups fine cornmeal
  • 2 cups rye flour
  • 1.5 teaspoons baking powder

Method

  1. 1 Combine corn syrup, water, raisins, fat, salt, and spices in a saucepan. Cook slowly for 15 minutes.
  2. 2 Allow the mixture to cool completely.
  3. 3 Stir in the cornmeal, rye flour, and baking powder until thoroughly blended.
  4. 4 Pour batter into a medium-sized bread pan.
