Raisin Spice Rye Cornmeal Bread
Ingredients
- 1 cup corn syrup
- 2 cups water
- 2 cups raisins
- 2 tablespoons fat
- 1 teaspoon salt
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- 1.5 cups fine cornmeal
- 2 cups rye flour
- 1.5 teaspoons baking powder
Method
- 1 Combine corn syrup, water, raisins, fat, salt, and spices in a saucepan. Cook slowly for 15 minutes.
- 2 Allow the mixture to cool completely.
- 3 Stir in the cornmeal, rye flour, and baking powder until thoroughly blended.
- 4 Pour batter into a medium-sized bread pan.
- 5 Bake in a slow oven (300°F) for 1 hour.
