Raisin Fig Sandwich Cookies
Ingredients
- 1/3 cup shortening
- 1 cup sugar
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 3 1/2 cups flour
- 4 teaspoons baking powder
- salt
- 2 teaspoons flour
- 1/2 cup sugar
- 1/2 cup water
- 1/2 cup chopped raisins
- 1/2 cup chopped figs
Method
- 1 Cream shortening; add sugar, beaten egg, milk and vanilla.
- 2 Sift together flour, salt, and baking powder; add to creamed mixture.
- 3 Roll dough thin on a floured board and cut with a cookie cutter.
- 4 Mix flour, sugar, water, raisins, and figs; cook until thick.
- 5 Place filling on half the cookies, top with remaining cookies, and press edges.
- 6 Bake in a 350°F oven for 12 to 15 minutes.
