Raisin Drop Cakes

Ingredients

  • 4 tablespoons shortening
  • 1 cup sugar
  • 1 egg
  • 2/3 cup milk
  • 1¾ cups flour
  • 3 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 cup raisins
  • 1 teaspoon vanilla extract
  • Powdered sugar or icing for topping

Method

  1. 1 Cream shortening and sugar together.
  2. 2 Add beaten egg and milk slowly, mixing well.
  3. 3 Sift together flour, baking powder, and salt; add to creamed mixture.
  4. 4 Wash, drain, and lightly flour raisins; fold into batter with vanilla.
  5. 5 Drop spoonfuls of mixture into greased individual cake tins.
  6. 6 Bake in a 425°F oven for 15 to 20 minutes.
  7. 7 Sprinkle with powdered sugar or cover with icing.
