Raisin Drop Cakes
Ingredients
- 4 tablespoons shortening
- 1 cup sugar
- 1 egg
- 2/3 cup milk
- 1¾ cups flour
- 3 teaspoons baking powder
- 1/8 teaspoon salt
- 1 cup raisins
- 1 teaspoon vanilla extract
- Powdered sugar or icing for topping
Method
- 1 Cream shortening and sugar together.
- 2 Add beaten egg and milk slowly, mixing well.
- 3 Sift together flour, baking powder, and salt; add to creamed mixture.
- 4 Wash, drain, and lightly flour raisins; fold into batter with vanilla.
- 5 Drop spoonfuls of mixture into greased individual cake tins.
- 6 Bake in a 425°F oven for 15 to 20 minutes.
- 7 Sprinkle with powdered sugar or cover with icing.
