Raisin Cake With Water Icing

Ingredients

  • 1 ½ cups sugar
  • ¾ cup shortening
  • 5 egg yolks
  • 3 teaspoons baking powder
  • 5 cups flour
  • 1 cup milk
  • 1 package small seedless raisins or currants
  • ½ teaspoon salt
  • 5 egg whites
  • water-icing

Method

  1. 1 Cream sugar and shortening until light lemon color.
  2. 2 Add egg yolks, baking powder, flour, milk, raisins, and salt; beat just to mix.
  3. 3 Cut and fold in stiffly beaten egg whites.
  4. 4 Pour into a lined, greased, and floured square pan.
  5. 5 Bake in a 350°F oven for one hour.
  6. 6 Ice with water-icing and slice while soft.
