Raisin Bran Muffins

  • 5 cups flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 3 cups sugar
  • 8 cups raisin bran (about 15 oz)
  • 4 eggs, beaten
  • 4 cups buttermilk
  • 1 cup vegetable oil

Method

  1. 1 Preheat oven to 425°F. In a large container, mix flour, salt, baking soda, sugar, and raisin bran.
  2. 2 In a separate bowl, beat eggs, then whisk in buttermilk and vegetable oil.
  3. 3 Pour liquid mixture into dry ingredients and stir until just moistened; batter will be lumpy.
  4. 4 Fill greased or lined muffin cups 3/4 full with batter.
