Raisin And Nut Coffee Cake
Ingredients
- 3 cups flour
- 5 tablespoons sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- ¾ cup milk
- 1 cup raisins, washed, drained, and floured
- 3 tablespoons shortening
- 1 egg
- ½ cup chopped nuts
Method
- 1 Sift flour, sugar, baking powder, and salt together in a bowl.
- 2 Toss raisins with the dry ingredients to coat.
- 3 In a separate bowl, whisk milk, melted shortening, and beaten egg.
- 4 Pour wet ingredients into dry and mix thoroughly to form a soft dough.
- 5 Roll dough into a ½-inch thick sheet and cut into two long strips.
- 6 Twist strips together to form a ring and place in a greased pan.
- 7 Sprinkle top with sugar and nuts, then let rise for 20 minutes.
- 8 Bake in a 350°F oven for 20 to 25 minutes.
