Quinoa Black Bean Salad With Lime Cumin Dressing

Ingredients

  • 1/2 cup quinoa (dry)
  • 1 1/2 cups water
  • 1 1/2 tablespoons olive oil
  • 3 teaspoons lime juice
  • 1/4 teaspoon cumin
  • 1/4 teaspoon ground coriander
  • 2 tablespoons chopped cilantro
  • 2 medium scallions, minced
  • 1 can (15.5 ounce) black beans, rinsed and drained
  • 2 cups chopped tomato
  • 1 medium red bell pepper, chopped
  • 1 medium green bell pepper, chopped
  • 2 green chiles, minced
  • black pepper to taste

Method

  1. 1 Rinse quinoa in cold water. Bring water to a boil in a saucepan, add quinoa, return to boil, then simmer until water is absorbed, 10 to 15 minutes.
  2. 2 While quinoa cooks, whisk olive oil, lime juice, cumin, coriander, cilantro, and scallions in a small bowl. Set aside.
  3. 3 Combine chopped tomatoes, bell peppers, green chiles, and black beans in a large bowl. Set aside.
  4. 4 Let quinoa cool for 15 minutes. Add cooled quinoa to the vegetable and bean mixture, pour dressing over, and toss to combine.
  5. 5 Season with black pepper. Cover and refrigerate until ready to serve.
