Quinoa Black Bean Salad With Lime Cumin Dressing
Ingredients
- 1/2 cup quinoa (dry)
- 1 1/2 cups water
- 1 1/2 tablespoons olive oil
- 3 teaspoons lime juice
- 1/4 teaspoon cumin
- 1/4 teaspoon ground coriander
- 2 tablespoons chopped cilantro
- 2 medium scallions, minced
- 1 can (15.5 ounce) black beans, rinsed and drained
- 2 cups chopped tomato
- 1 medium red bell pepper, chopped
- 1 medium green bell pepper, chopped
- 2 green chiles, minced
- black pepper to taste
Method
- 1 Rinse quinoa in cold water. Bring water to a boil in a saucepan, add quinoa, return to boil, then simmer until water is absorbed, 10 to 15 minutes.
- 2 While quinoa cooks, whisk olive oil, lime juice, cumin, coriander, cilantro, and scallions in a small bowl. Set aside.
- 3 Combine chopped tomatoes, bell peppers, green chiles, and black beans in a large bowl. Set aside.
- 4 Let quinoa cool for 15 minutes. Add cooled quinoa to the vegetable and bean mixture, pour dressing over, and toss to combine.
- 5 Season with black pepper. Cover and refrigerate until ready to serve.
