  • sugar
  • egg whites
  • flavoring
  • heavy cream
  • quince jelly sauce

Method

  1. 1 Beat egg yolks and sugar until very light.
  2. 2 Fold in egg whites and flavoring.
  3. 3 Stand bowl in boiling water and beat continuously until hot.
  4. 4 Remove from heat and beat constantly for 10 minutes until cool.
  5. 5 Fold in stiffly whipped cream, pack, and freeze.
  6. 6 Serve with quince jelly sauce poured over the mousse.
