Quick Orange Marmalade

Ingredients

  • 2 oranges
  • 1 lemon
  • ½ cup water
  • 4 cups water
  • 2 ½ cups water
  • 3 ½ cups sugar
  • ¼ cup commercial pectin

Method

  1. 1 Remove skins in quarters from oranges and lemon, close to the pulp. Break up pulp and remove seeds.
  2. 2 Add ½ cup water to pulp and simmer in a covered saucepan for 45 minutes.
  3. 3 Boil rinds with 4 cups water in a covered saucepan for 20 minutes. Drain and discard water.
  4. 4 Scrape out and discard the white part of skins, leaving only yellow rind. Shred yellow rinds thinly into 1-inch pieces.
  5. 5 Simmer shredded rinds in 2 ½ cups water in a covered saucepan for 15 minutes. Drain and discard water.
  6. 6 Mix cooked pulp with rinds. Measure 2 cups of mixed rind and pulp, adding water if necessary to make up this amount.
  7. 7 Add 3 ½ cups sugar and mix well. Stir constantly and bring to a vigorous boil over hot fire.
  8. 8 Boil hard for 3 minutes, stirring constantly. Remove from heat, add ¼ cup commercial pectin, and stir well.
  9. 9 Let stand 5 minutes only, stirring occasionally. Pour into glasses.
