Quick Orange Marmalade
Ingredients
- 2 oranges
- 1 lemon
- ½ cup water
- 4 cups water
- 2 ½ cups water
- 3 ½ cups sugar
- ¼ cup commercial pectin
Method
- 1 Remove skins in quarters from oranges and lemon, close to the pulp. Break up pulp and remove seeds.
- 2 Add ½ cup water to pulp and simmer in a covered saucepan for 45 minutes.
- 3 Boil rinds with 4 cups water in a covered saucepan for 20 minutes. Drain and discard water.
- 4 Scrape out and discard the white part of skins, leaving only yellow rind. Shred yellow rinds thinly into 1-inch pieces.
- 5 Simmer shredded rinds in 2 ½ cups water in a covered saucepan for 15 minutes. Drain and discard water.
- 6 Mix cooked pulp with rinds. Measure 2 cups of mixed rind and pulp, adding water if necessary to make up this amount.
- 7 Add 3 ½ cups sugar and mix well. Stir constantly and bring to a vigorous boil over hot fire.
- 8 Boil hard for 3 minutes, stirring constantly. Remove from heat, add ¼ cup commercial pectin, and stir well.
- 9 Let stand 5 minutes only, stirring occasionally. Pour into glasses.
