Quick Corn Chowder With Cheddar
Ingredients
- 1/2 teaspoon vegetable oil
- 1 medium onion, chopped
- 4 teaspoons garlic, minced
- 3 tablespoons flour
- 2 cups non-fat milk
- 2 teaspoons mustard
- 1/4 teaspoon dried thyme
- black pepper to taste
- 2 cups frozen corn kernels
- 4 tablespoons shredded reduced-fat cheddar cheese, divided
Method
- 1 Heat oil in a large skillet over medium-high heat. Sauté onion and garlic until golden, about 2 minutes.
- 2 In a small bowl, whisk together flour, milk, mustard, thyme, and pepper until smooth.
- 3 Add the milk mixture and corn to the skillet. Stir frequently until the mixture boils and thickens, about 3 minutes.
- 4 Divide into four bowls and top each with 1 tablespoon of shredded cheese.
