Quick Corn Chowder With Cheddar

Ingredients

  • 1/2 teaspoon vegetable oil
  • 1 medium onion, chopped
  • 4 teaspoons garlic, minced
  • 3 tablespoons flour
  • 2 cups non-fat milk
  • 2 teaspoons mustard
  • 1/4 teaspoon dried thyme
  • black pepper to taste
  • 2 cups frozen corn kernels
  • 4 tablespoons shredded reduced-fat cheddar cheese, divided

Method

  1. 1 Heat oil in a large skillet over medium-high heat. Sauté onion and garlic until golden, about 2 minutes.
  2. 2 In a small bowl, whisk together flour, milk, mustard, thyme, and pepper until smooth.
  3. 3 Add the milk mixture and corn to the skillet. Stir frequently until the mixture boils and thickens, about 3 minutes.
  4. 4 Divide into four bowls and top each with 1 tablespoon of shredded cheese.
