Quick Chicken And Vegetable Soup
Ingredients
- 1 can tomatoes (14.5 oz), broken up
- 1/2 cup low-sodium chicken broth
- 1 package cooked chicken, chopped
- 1/4 cup mixed vegetables (10 oz frozen)
- 1 tablespoon onion, chopped
- 1/8 teaspoon thyme
- 1/8 teaspoon ground black pepper
- salt to taste
Method
- 1 Peel and chop onion to yield 1 tablespoon.
- 2 Pierce tomatoes with a fork and break into pieces.
- 3 Combine tomatoes and broth in a pan; cook over medium heat until boiling.
- 4 Add onion, reduce heat to low, and simmer for 5 minutes.
- 5 Add chicken, mixed vegetables, thyme, pepper, and salt.
- 6 Cover and cook over low heat for 10 minutes until vegetables are tender.
