Pumpkin Raisin Whole Wheat Bread
Ingredients
- 1 can (15 ounce) pumpkin
- 1 cup sugar
- 1/4 cup vegetable oil
- 1 cup low-fat plain yogurt
- 1 1/2 cups all-purpose flour
- 1 1/2 cups whole wheat flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1 cup raisins
Method
- 1 Preheat oven to 350°F. In a large bowl, beat together pumpkin, sugar, oil, and yogurt.
- 2 In a medium bowl, combine flours, baking powder, soda, cinnamon, and salt. Add to pumpkin mixture and stir until just moistened.
- 3 Stir in raisins.
- 4 Pour batter into two greased 9x5x3 inch loaf pans.
- 5 Bake for about 1 hour. Cool in pans for 10 minutes, then remove to a wire rack to cool completely.
