Pumpkin Raisin Whole Wheat Bread

Ingredients

  • 1 can (15 ounce) pumpkin
  • 1 cup sugar
  • 1/4 cup vegetable oil
  • 1 cup low-fat plain yogurt
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 cup raisins

Method

  1. 1 Preheat oven to 350°F. In a large bowl, beat together pumpkin, sugar, oil, and yogurt.
  2. 2 In a medium bowl, combine flours, baking powder, soda, cinnamon, and salt. Add to pumpkin mixture and stir until just moistened.
  3. 3 Stir in raisins.
  4. 4 Pour batter into two greased 9x5x3 inch loaf pans.
  5. 5 Bake for about 1 hour. Cool in pans for 10 minutes, then remove to a wire rack to cool completely.
