Pumpkin Oat Bars
Ingredients
- 1 can (15 ounces) pumpkin
- 1 1/2 cups packed brown sugar
- 4 eggs
- 3/4 cup cooking oil
- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 tablespoon ground cinnamon
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- margarine or butter (to grease the pan)
Method
- 1 Preheat oven to 350°F.
- 2 In a medium bowl, stir together pumpkin, brown sugar, eggs, and oil until well mixed.
- 3 In a large bowl, whisk together flour, oats, cinnamon, baking powder, and baking soda.
- 4 Add the pumpkin mixture to the dry ingredients and stir until combined.
- 5 Grease a 9x13-inch baking pan with margarine or butter.
- 6 Pour batter into the prepared pan and bake for 30 minutes.
